Ice cream from milk is simply called milk ice cream. However, there are other varieties of this dessert – creamy (as it is easy to guess, made from cream) and the king of all ice cream is plombir. By the way, it is also based on fatty cream and butter.

A variety from milk can be considered the lightest, since its fat content is a maximum of 3.5%. Of course, sorbets made from berry or fruit puree surpass it by ‘lightness’, but they do not have that very tender milky creamy taste that most of us are accustomed to. As for the other types of ice cream, their fat content can reach 10 and 16 percent for creamy and plombir, respectively.

When we look at the production on an industrial scale, this process does not require only strict observance of standards and technologies, but, most importantly, the availability of specialized equipment. How to make milk ice cream at home?

Let's look at a couple of recipes and see that it's really not that difficult.

Recipe 1 - simple ice cream from milk

List of ingredients:

  1. milk – 2.5 cups.,
  2. eggs – 4,
  3. sugar – 1 cup,
  4. vanilla.

Let's start:

  1. Separate egg yolks from whites.
  2. Pour them into the sugar. The finer the sugar will be, the faster it will dissolve.
  3. Whisk the resulting mixture.
  4. Add vanilla to taste.
  5. Dilute the mixture with a portion of the prepared milk to accelerate the dissolution of the sugar.
  6. Pour everything into a saucepan and put it on a slow fire.
  7. Begin to add the remaining milk gradually, and stir the resulting mixture continuously.
  8. As soon as it starts to thicken, remove the saucepan from the stove and filter the mixture through a fine sieve, pouring it into one common container or spreading over the ice cream bowls.
  9. Pre-cool the portions with cold water and send them to the freezer.
  10. To make the structure of the delicacy more gentle, take ice cream out of the refrigerator every 30 minutes and mix thoroughly. This will avoid the formation of a homogeneous piece of ice.
  11. The dessert can be served when it freezes.

Recipe 2 – delicious chocolate ice cream

List of ingredients:

  1. milk – 1.5-2 cups,
  2. chocolate (you can use milk or dark chocolate) – 1 bar,
  3. sugar – 2.5 tbsp.,
  4. a small piece of butter.

Let's start:

  1. Grate the chocolate on a grater or with a knife.
  2. Put the chocolate chips in a metal container and melt them on a water bath.
  3. Add a tablespoon of sugar and the remaining ingredients to the chocolate.
  4. Stir the resulting mass until it is uniform.
  5. Remove the dishes from the water bath and allow the mixture to cool, continuously stirring. You can cool it with water.
  6. Pour the liquid ice cream into the containers and put them into the freezer.
  7. As in the previous case, if you stir the solidifying mass, it will make the dessert airy.

Why do you think even light milk ice cream is not recommended during a diet? You can say that because of its high calorie content, and you will be right, but only in part. In fact, you can safely say that the main enemy of a nice figure is sugar – just look at how much of it is required in each recipe. And in fact it consists of almost 100% carbohydrates that quickly settle down in the form of fat!

In general, sugar is used only to make ice cream sweet, so in a number of recipes you may not add it, if you don’t want to. For example, in the second recipe chocolate itself can make the mixture sweet. In other cases you can use various natural sweeteners instead of harmful sugar, if you add them to taste. Now they can be easily bought in almost any store. Substitutes with a similar (and sometimes much greater) level of sweetness practically do not contain calories, and that has a positive effect on the calorie content of the whole dessert and its overall benefit to the body.

And such a natural and healthy ice cream without sugar can not only be made at home, but also purchased in stores. You can even find such tastes that it would be quite problematic to make at home.
