When summer comes and the heat is set in outdoors, we all remembering a wonderful, adored from childhood, delicacy − the ice cream. However, that's tough! Someone is keeping the figure and cannot afford oneself the extra calories available in milk and cream in excess, someone does not tolerate lactose in principle, and someone has made a choice in favor of the vegetarianism. However, you want something, though a bit. How to be? Fortunately, there are the ice-cream options that do not contain milk and its cream, and at the same time are easy to prepare at home.
Recipe 1 (Strawberry Sorbet)
6 small eggs;
0.5 cups of sugar (a cup is 200ml);
0.5 tbsp. of sunflower / olive oil (odorless);
500-600g of strawberries (blueberries, raspberries or other berries for your taste);
1 pct. of vanilla sugar.
Separate the egg whites from the yolks. Next, mix the yolks with sugar (half cup) and beat up thoroughly. Add the oil (half cup) and again whisk thoroughly.
Grind the strawberries in the blender and mix it in the resulted mixture.
In a separate container, beat up the egg whites with three tablespoons of sugar and vanilla sugar until the peaks appear.
Accurately combine the resulted mixture (strawberry and the egg white with sugar).
Lay out it in the molds and leave in the freezer for 8 hours − and voila! This is a strawberry sorbet.
Recipe 2 (chocolate mousse-ice cream)
6 or more eggs;
200g of the black chocolate;
¼ tbsp. of sugar;
1 tbsp. of the red wine.
Melt the chocolate.
Beat up the egg yolks with the wine, then add the chocolate and replace everything again.
Beat up the egg whites with sugar.
Gently add the protein-sugar mixture to the chocolate.
Lay out the molds and send them to the freezer for 8 hours.
Recipe 3 (melon-honey ice cream)
A small melon;
85g of honey;
50-60ml of water;
1 tbsp. of the juice of lime or lemon;
A flesh of melon cut into small pieces and put them in the freezer until completely freezing (about 2 hours). Make sure that these pieces do not stick together.
Heat the water and, holding it on a low heat, pour the honey into it. Stir the mixture well and allow to cool.
Take the melon from the freezer and place it in a blender, pour it into the water with honey and lime juice, throw a few leaves of mint (better 1-2, because otherwise the mint can break the taste of all other components). Grind everything to a homogeneous mass. If it turns dry, add a little more water with honey.
Re lay the resulting mass into the molds and places it in the freezer until it freezes.
